Context: I’m hoping to simulate ammonium acetate in aqueous solution/its effects on viscosity.
I’d be grateful for any thoughts/suggestions - my literature search efforts so far aren’t coming up with much.

with that and published the results.

perhaps you need to improve your literature search approach.
apart from that, have you checked the standard "organic" force fields:
CHARMM, Amber, OPLS/AA and so on?
