Why do you use pair_style hybrid/overlay and then only use a tabular potential? This is not what is causing instability, but I was just wondering.
Besides, try rerun the simulation of the vesicle with a smaller timestep, say 4 fs, until the sample is well equilibrated. Also, increase the damping parameter as to have a less viscous implicit solvent.
